We Started as a Food Truck in the Spring of 2017. Our signature dish and what we based out entire menu around was our Bourbon Chicken. We successfully operated the food truck in the North Metro area for 5 years before the opportunity to open a brick and mortar location in our hometown. We opened our Brick and Mortar location by the same name in Lafayette, CO in February of 2021. Since then we have had the chance to grow our menu into the amazing menu that it is now. We pride our selves on our awesome food, but more importantly, on our awesome customer service. We want to make sure everyone that comes through our doors feels welcome and part of the Ruby Ru's Family!
